Chapter 120: Chapter 120 Deliberately Coming to Vent Anger (1)_1
The noodle machine was brought back home, and Lady Fang and San Ya observed and scrutinized it.
Si Ya took out the chicken leg given by Grandma Sun and offered it to San Ya and Pei Wendong, "I heard that they’ve made a deal for one hundred taels of silver. Their family is indeed very happy, holding onto the eldest sister and not letting her leave, slaughtering a big rooster, and cutting up meat. This chicken leg is from that big rooster."
The chicken leg was large, extending from the claw all the way to the back.
Lady Fang smiled, "Their family is also very kind-hearted!"
"Anyone would appear kind-hearted when a business deal of one hundred taels of silver practically falls into their lap," Si Ya muttered under her breath but stopped speaking when she saw Lady Fang frown and glance her way.
Pei Qin had already rolled up her sleeves and washed her hands, "Let’s do a trial run tonight, and tomorrow we’ll study the ingredients thoroughly. Once we bring back the pots and pans, we can open for business!"
"I’ll go and knead the dough!" Lady Fang quickly came over.
Pei Qin prepared the lye water and instructed her to mix it into the dough, "Don’t make the dough too hard, keep it a bit soft."
Lady Fang assented, knowing that if they were to use the noodle machine to press the noodles, the dough naturally needed to be soft, as hard dough wouldn’t press through.
Once the dough was kneaded, it rested for half an hour.
Pei Qin called Si Ya to bring the meat, along with green onions, ginger, garlic, chili, star anise, cinnamon, and frozen tofu. She heated oil, fried the frozen tofu in it, and then cut it into thick strips.
After frying a bowl of chili oil, she sautéed the scallions, ginger, and garlic, followed by the tofu strips. She then stir-fried the meat slices until they were tender, adding a bit of chili oil. This resulted in a bowl of mixed ingredients.
She then filled the pot with water and brought it to a boil, set the cleaned noodle machine over the pot, cut the dough into small pieces, placed one inside the machine, and pressed down on the handle to extrude the noodles directly into the boiling water.
Once the noodles were cooked, she scooped them into bowls and topped them with the prepared ingredients, sprinkling a few green cilantro leaves over them. The slightly yellowish thick noodles, red oily soup, and tender meat slices adorned with green leaves were steaming and looked particularly appetizing.
The women each took a bite and, except for Pei Qin, found it incredibly delicious.
"Qinqin, is it not good enough? Should we try a few more times?" Lady Fang thought it was already very good, much better than the plain noodles they had eaten in the county.
"Others may be able to learn everything else, but the key is in the noodles. The flavor of the noodles is still lacking," Pei Qin had already searched in the rice and noodle shops; this area didn’t have buckwheat flour. If they could switch to buckwheat flour, then the noodles would have just the right taste.
"It’s already very delicious! Mother has never had such tasty noodles before! Let’s start selling and see how it goes!" Lady Fang patted her head.
San Ya also eagerly said, "Eldest sister! It really is delicious! Even better than the beef noodles we’ve had!"
Even if they did a test now, they didn’t have many good ingredients, and the only flour available was the regular white flour.
Pei Qin, not giving up, asked Lady Fang to knead the dough again, and only boiled the noodles to taste their flavor.
By evening, everyone was full, the last of the white flour at home was used up, and Pei Qin had determined the precise ratios of white flour, lye water, and saltwater needed, the kneading technique, and resting time, establishing a recipe.
The next day was still overcast.
After some thought, Pei Qin took a handcart, left Si Ya and Pei Wendong to watch the house, and went with Lady Fang and San Ya to the county town to buy flour, oil, salt, and other ingredients.
The cold wind howled as the slow-moving mule cart approached, the fare had gone up by one wen money.
Upon reaching the county town, their faces stung from the wind. Pei Qin got off the cart early and ran alongside it for a while, warming up in the process.
After entering the Wang family’s rice and flour shop, she bought two hundred catties of white flour and a hundred catties of rice. Oil, salt, and other condiments were also purchased in large amounts. Realizing that they couldn’t carry so much, Pei Qin resigned herself, loaded up the handcart, and pulled it to the city gate to catch a ride. Along the way, people frequently glanced at them, marveling at how they could pull such heavy loads with ease.
